Pesto without Cheeese Recipe


ingredients:
basil 400g
nuts 100g
garlic 3 cloves
salt 1 teaspoon
pepper
olive oil

  1. place basil leaves, nuts (I use whatever nuts we have, almonds, pine nuts, cashew nuts…) and garlic into the food processor and pulse until finely chopped
  2. mix in salt, pepper and add olive oil, you can do this in the food processor and give it few more pulses or in a separate bowl and mix it in just by hand, food processor is harder to clean than a bowl, but the final product will be smoother
  3. basil oxidizes quickly, therefore if you won’t use all straight away, it is good to put the pesto in a jar and pour some more olive oil on top to prevent oxygen getting to the pesto
